9 Nutritious (and Splendid) Sandwiches

Whether you brown bag it to school, rush home for a quick bite or learn from home virtually, these sandwiches are incredible, and slightly more elaborate than your standard meat and cheese.

 

*Note, you can make these sandwiches on any type of bread (whole wheat, croissant, pita bread, roll).

 

PB&H

Rather than adding sugar induced jelly to your peanut butter, add some real nuts, bananas and honey for a protein charged, delicious meal.

 

Ingredients:

  • 2 TBSP creamy peanut butter
  • ½ small banana (cut in half)
  • 1 TBSP salted dry roasted peanuts
  • 1 tsp honey

 

Directions:

  1. Spread peanut butter on bread. 
  2. Arrange banana slices over peanut butter.
  3. Sprinkle peanuts over banana slices.
  4. Drizzle with honey.

 

Hummus and Roasted Red Pepper

This vegetarian delight is full of flavor.

 

Ingredients:

  • 2 TBSP hummus
  • 6 spinach leaves
  • 2 TBSP chopped roasted red peppers
  • 2 TBSP crumbled feta cheese

 

Directions:

  1. Spread hummus on bread. 
  2. Arrange spinach leaves on hummus.
  3. Sprinkle chopped roasted red peppers and crumbled feta cheese over spinach.

 

Lettuce Wrapped Roast Beefpexels-caleb-oquendo-3038243 copy

Inspired by Asian recipes, this roast beef is wrapped in lettuce and sesame oil.

 

Ingredients:

  • 2 TBSP mayonnaise 
  • ½ tsp sesame oil
  • ¼ cup chopped green onions
  • 3 thinly sliced roast beef
  • 2 leaves buttered lettuce
  • ¼ tsp sesame seeds

 

Directions:

  1. In a small bowl, combine mayonnaise and sesame oil.
  2. Spread mayonnaise mixture on bread. 
  3. Sprinkle green onions over mayonnaise mixture.
  4. Arrange roast beef and lettuce leaves on sandwich.
  5. Sprinkle sesame seeds on top.

 

Turkey Treat

Rather than turkey and guacamole, a delicious combination, simply add avocado and cilantro instead.

 

Ingredients:

  • 2 TBSP cream cheese
  • 3 slices of deli turkey meat
  • ¼ medium avocado 
  • Dash or lime juice
  • Pinch of salt and pepper
  • 1 TBSP fresh cilantro leaves
  • 1 TBSP Salsa or drizzle of hot sauce (optional)

 

Directions:

  1. Spread cream cheese on bread. 
  2. Arrange turkey on cream cheese.
  3. Slice avocado and season with lime juice, salt and pepper. 
  4. Place avocado on top of turkey.
  5. Sprinkle cilantro on top.
  6. Drizzle with salsa or hot sauce (if using).

 

Transformed Tuna

Rather than pickles, use olives for a refreshing take on a classic tuna sandwich.

 

Ingredients:

  • 2 TBSP prepared olive tapenade (or just chop up 2 TBSP of ripe, pitted olives)
  • 2 oz drained tuna
  • 1 hard boiled egg (sliced into ¼ inch rounds)
  • 4 thinly sliced cucumber

 

Directions:

  1. Spread olive tapenade on bread. 
  2. Layer tuna, hard boiled egg and cucumber slices on olives.

 

Curried Chicken Non-Salad

A sweet-and-spicy take on a standard chicken salad.

 

Ingredients:

  • 2 TBSP Greek yogurt
  • ¼ tsp curry powder
  • ½ cup shredded roasted chicken
  • 2 TBSP slivered almonds
  • 4 thinly sliced apple pieces

 

Directions:

  1. In a small bowl, combine Greek yogurt and curry powder.
  2. Spread yogurt mixture on bread. 
  3. Layer chicken over yogurt mixture.
  4. Sprinkle slivered almonds on chicken.
  5. Arrange apple slices on top.

Pile on some of your favorite fall flavors for a mouthwatering lunch. 

 

Ingredients:

  • 3 TBSP canned pumpkin puree
  • 1 TBSP goat cheese crumbles
  • 1 TBSP toasted Pepitas (pumpkin seeds) or sunflower seeds
  • 2 TBSP dried cranberries (such as Craisens)
  • ¼ cup bean sprouts
  • ¼ cup arugula
  • 3 slices deli turkey meat (or leftover roasted turkey)

 

Directions:

  1. Spread pumpkin on bread.
  2. Sprinkle goat cheese, Pepitas and dried cranberries over pumpkin.
  3. Arrange bean sprouts and arugula on top.
  4. Layer on the turkey.

 

Italian Feast

Create your own classic at home with thick italian bread or a sub roll. 

 

Ingredients:

  • 1 slice onion
  • ½ TBSP red wine vinegar
  • ½ TBSP extra-virgin olive oil
  • Pinch of salt and pepper
  • ¼ cup shredded lettuce
  • 2 slices provolone cheese
  • 2 slices genoa salami
  • 2 slices deli ham
  • 2 slices capicola
  • 3 slices tomatoes
  • ¼ tsp dried oregano

 

Directions:

  1. Soak the onion slice in cold water for 15 minutes.
  2. Drizzle bread with vinegar and olive oil.
  3. Season bread with salt and pepper.
  4. Layer the cheese and meats on the bread.
  5. Arrange lettuce on top.
  6. Drain onion and pat dry.
  7. Place onion and tomato on top of lettuce.
  8. Sprinkle with oregano.

Late morning, or just feeling like a little breakfast for lunch? Follow these simple steps for a great breakfast sandwich.

 

Ingredients:

  • 1 TBSP mustard
  • 1 TBSP maple syrup
  • 1 Fried Egg
  • 1 Slice of Swiss cheese
  • 2 slices deli ham
  • ½ tsp chopped chives

 

Directions:

  1. In a small bowl, combine mustard and maple syrup.
  2. Spread mustard mixture on bread.
  3. Arrange egg, cheese and ham over mustard.
  4. Sprinkle chives on top.
